Conveyor-belt sushi restaurant from Osaka that focuses on seasonality and freshness
This is an Osaka-born conveyor-belt sushi restaurant that insists on freshness and only opens restaurants within a two-hour drive of the Eastern Market. As a restaurant owned by a fresh fish restaurant, it offers not only standard items, but also rare fish such as black sea bream and offshore bigeye tuna, as well as natural fish such as hamo (pike conger) and hamachi (yellowtail), depending on the season. The open kitchen allows diners to watch the fish being processed by artisans, who also put on a tuna dismantling show on occasion. The restaurant is exceptionally particular about its tuna, and the Kyoto tuna, which only appears in season from October to January, is an original brand of Daikki Suisan.
